We don’t do “stuffing” in the south, for us it’s cornbread dressing and if you’re extra lucky you’ll get dressing with a Cajun recipe including oysters. ALSO, candied yams will beat any other vegetable or potato dish in the list of Thanksgiving options.
We make an Italian Rice Stuffing, that’s basically seasoned white rice, ground beef, bacon, pinoli nuts, and craisins that may sound odd but it’s a staple. With gravy drizzled on top it’s an amazing side and our family clamors more for it than traditional bread stuffing
@Star2236 Never understood why people did that. Yams were ridiculously sweet to me, especially when caramelized. Also, when caramelized, the marshmallows slid off.
Sweet potato soufflé, jalapeno bacon brussel cornbreadstuffing (this or some variation is what I put in the deboned legs when I roulade them), NY style cheesecake with a hobnob/gingerbiscuit crust and various compotes, roasted root veg gratin…… I love making the things.

I went basic and said Mashed Potatoes, because they are amazing.
But I also know a recipe for a baked sweet potato whip that is awesome.
Also one of my families traditional items is cauliflower in cheese sauce, which is great. Plus the fruit salad in whipped cream.
We never did green bean casserole though.

My cousin makes them and the marshmallows stay on top. So yummy.

Oyster dressing, followed by spicy sausage-stuffed squash.
Sage and bread stuffing (NOT dressing, though that is still really good). But nothing matches actual stuffing with a little real gravy on it.
