Smashed is not a cooking level, heh. I’ve seen commercials on TV lately advertising ‘hand smashed’ burgers and to be honest that just…doesn’t sound great LOL. Hand formed, maybe, sounds better!
@PooltoyWolf I always wondered what the big deal was about smash burgers, until recently when i saw it demonstrated on a show & found out it’s a technique that creates a unique level of doneness, a crispy-but-juicy texture that’s similar to deep-fried. @PooltoyWolf To date, I have had precisely one “smashed” burger, from the drive-thru of a Freddy’s in Colorado Springs late one Sunday evening. I have never been as disappointed with a burger as that one left me. I have declined all subsequent “opportunities” to obtain another, either from Freddy’s or their many competitors.
@werehatrack Funny; we used to have a Freddy’s near my house. I loved it, and when it closed, I went to great lengths to find another location! I love the burgers, fries, and the various ‘concretes’ and shakes.
EDIT: I have also never heard Freddy’s refer to their own burgers as smashed, though if they’re like Steak n’ Shake’s, it makes sense.
@PooltoyWolf Steak n Shake’s burgers are succulent by comparison to the paper-thin meat-thing in that Freddy’s product; it had the approximate consistency of a tostada shell.
@werehatrack You must have got a lemon of a burger! I have had Freddy’s almost as much as SnS recently, and both are very tasty to me. Ditto the fries.

Lol … Funny, as long as they’re not dried out or charred, i usually prefer my patties on the thin side, with a pile of lettuce, tomato & onions on it, basically a salad on a bun with hamburger as a garnish & lots of condiments. But, if you’re in the mood for a thick, juicy slab of meat, that’s definitely not going to do it for you!
I prefer medium well, but these days, unless you grind it yourself, it’s safer to opt for well-done, which is ok for 80/20, since it doesn’t turn into a hockey puck as easily. And, it can’t be too charred–i like to taste burger, not ash.
