I made meatloaf today. Started just generic meatloaf, but instead of catsup or bbq sauce or whatever, i topped it with bacon jam. The brand i bought had a lot of apple in it so it was pretty sweet.
And damn, i wanted to eat the entire thing, but i didn’t.
@Cerridwyn Recently, I modified one of the traditional meatloaf recipes that I absolutely did not like to improve it dramatically. All I did was take out the nasty green bell pepper and substitute roasted red pepper in its place. The difference was amazing. But I think I’m going to try your bacon jam thing on the next one. That really sounds good.
@werehatrack it was surprisingly so. I originally had thought to mix it in kind of like you would eggs or whatever to you know hold things together and then I just sort of Google just because and couple different places I found said to put it on top like a like a glaze almost and damn. Yeah I know some bacon onion jams are more Savory than this one but it would still have been good
@Kyeh@macromeh I discovered it many years ago when we had this kind of I don’t know what you want to call it restaurant and bar open up across the street. They were incredible and they put bacon jam on their burgers and I fell in love. They’re a really nice place and they got rave reviews even on the Statewide level for this little community. Two guys founded it. One was the chef one was the businessman. A year later they opened up a second location in the same town and we’re doing okay with both of them. The day before Thanksgiving the businessman at absconded with the bank account
@Kyeh@macromeh not that I am aware of. I discovered the place when it opened it was directly across the street from me sort of. And later a friend of mine son started working there and he when they all came in to work on Friday after Thanksgiving the guy who was the chef paid them all for their day in cash and told them that it was nothing that he could do. He did not tell them about the money situation I found out about that later through somebody else.
when my daughter was maybe 14 she tackled a pretty ambitious family dinner of breaded pork chops. turns out she accidentally used powdered sugar instead of flour. idk about better, but it was still perfect edible.
@jouest@Kyeh I have put apple butter on pork chops. Or cook them in apple juice so I mentioned the sugar probably did something odd because powdered sugar is so fine. And there’s a fair number of spice mixes out there that contain sugar for many of them for pork
Another meatloaf idea I came up with years ago when I used to cook: rather than mixing breadcrumbs and spices in with ground beef, I used Pepperidge Farm Classic stuffing mix. It has a nice blend of herbs and spices. I also add eggs and tomato paste, not ketchup. To make it healthier, I mix in some frozen broccoli florets.
@heartny meatloaf is something that lends itself to experimentation and play. I did one once with teriyaki sauce and pineapple and it was also quite yummy. But I wouldn’t want to do it regularly
More recently I’ve started to “healthify” many recipes…taking the cues from the original idea & moving towards less/better fats, minimizing sugar/sweeteners & salt, using alternate flours than white (AP), adding vegetables wherever possible, all while keeping it delicious! Don’t forget, you eat with your eyes first! Make sure it looks good no matter what!

@Cerridwyn @Kyeh Bacon and caramelized onions are two of my favorites - how have I never heard of “bacon jam” before? Definitely will try!

I started adding butterscotch chips to my banana bread, and now I don’t make it any other way. I also add some grated orange peel.
